Mexican Ceviche

What to do with Wahoo? We asked our Captain’s and they all agree
MAKE CEVICHE!

Traditional Yucatecan Ceviche is very easily made, and yummy.
Take your Wahoo and cut it into cubes no bigger than dice
Cover the Wahoo in a bath of lime juice, just enough so all the fish is covered.
Wait 10 -20 minutes, and while the acid in the citrus cooks the fish make a simple Pico de Gallo Salsa
Cut up tomatoes, onions, and cilantro, add lime juice, some salt and pepper.
Make equal parts salsa to fish.
Drain the lime from your fish and you will note the fish will now have a grey cooked appearance.
Mix the fish with the Pico de Gallo Salsa and eat with Mexican Tortilla Chips.
Don’t forget your cerveza! and add a little more flavor add chopped chili’s or hot sauce.
